Iced Chaga Chai

While traditionally a tea, spices used in chai compliment coffee just as well. Warming spices are wonderful digestive aids, anti virals, and perfect for winter sipping. Whether served iced or warm, this is an excellent coffee drink for any occasion, day or night.

To make chai

½ cup full fat coconut milk, whole milk or plant-based milk of choice
½ tsp ground ginger
½ ground cinnamon
¼ tsp ground cloves
¼ tsp ground cardamom
1 tsp maple syrup or raw honey
½ tsp vanilla extract 

In a small pot, add milk + spices and stir to combine. Over medium heat, stir constantly until warm and beginning to steam. Taste for sweetness and add more maple syrup or honey as desired & add to brewed Hocus Pocus.

 

Coffee Rub 

Ground coffee adds a dark, slightly bitter note to many savory meals and makes for an excellent rub for roast beef or poultry. Try this rub with finely ground Brainchild or Hocus Pocus, or add one of our instants for a quick-to-prepare feast. Here is a good starter recipe to play with and eventually make your own.

 

Double Chocolate Espresso Cookies

Espresso and chocolate are an easy pair, and work well together in cakes, custards (think tiramisu and chocolate mousse cake) and cookies! These crispy, meringue-like cookies are a lovely addition to holiday treat trays. Here's a fave recipe from our friends at Food52.

 

Clean Irish Coffee

Irish coffee smacks of holiday cheers – a soothing hot beverage that feels indulgent and nostalgic. Here, we blend our ground coffees with a handful of simple ingredients to make a good-tasting, clean-drinking holiday favorite.

To make

Whip about ½ cup of heavy cream until soft peaks form and set aside. Brew Hocus Pocus or Brainchild coffee and pour into individual cups, as desired. To each glass, add ¼ teaspoon of rum extract, and 1 teaspoon of brown sugar and stir. Add extract or sugar to taste and spoon over a few dollops of whipped cream. Sift cocoa powder over a fine mesh strainer and serve.
